Carrot Raisin Bran Muffins

You guys got it again…black-eyed peas are, in fact, a BEAN…not a PEA! And yes, they are good luck to eat on New Years Day! 😀

Carrot Raisin Bran Muffins slightly adapted from Something Good This Way Comes

1 cup wheat bran
1 cup fat-free milk (next time I will do 1/2 cup canola oil + 1/2 cup milk)
3/4 cup whole wheat pastry flour
1/2 cup old fashioned oats
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
2 tsp flaxseed, ground + 2 Tbsp water (or just one egg)
2 Tbsp maple syrup
2 Tbsp brown sugar
100 g carrot, grated (3/4 cup)
1 tsp vanilla extract
1/3 cup raisins

Directions:

Preheat your oven to 350° F.

Mix your flax egg (or regular egg) in a small bowl and set aside for a few minutes.

Mix your milk and wheat bran in another bowl and allow it to absorb.

Mix all dry ingredients (except raisins) and wet ingredients (including carrot and flax egg) in separate bowls.

Add the wet ingredients to the dry. Do NOT over-mix! Add your wheat bran mix to the batter. Fold in raisins.

Bake for about 25-30 minutes, or until a toothpick comes out clean. Yield: 9 large muffins.

Nutrition Information (per muffin): 137 calories; 1.4 g. fat; 24 mg. cholesterol; 84 mg. sodium; 29.9 g. carbohydrate; 5.1 g. fiber; 3.6 g. protein

Result: These were good, but kinda dense and dry. But the raisins and carrots together were delicious! The nutrition stats are super impressive, too…137 calories, low in sodium, and 5.1 grams of fiber!? I think I might try these again with 1/2 cup of canola oil subbed in for 1/2 cup of the milk…I think that would add some moisture to the muffins.

Last night I got creative with my workout. Mr. P is out of town and yesterday I was gone from 8am to 7pm, leaving Miss Lily in her crate for way longer than I care to even think about 😦 So, we got in our workout together playing mommy-chases-Lily in the backyard. I totaled 1.9 miles on my Garmin which seems like a lot more than it is when you live on 0.16 acres! Dizzy much? Oh yeah.

It has to be trickier…you guys are too smart!! Can you tell I’m having fun with these? 🙂

    Did you know that even Giant Eagle sells whole wheat pastry flour?! I almost bought some the other day, until I reminded myself that I no longer bake due to lack of time…..maybe I will again one day. Actually now that I have all this pumpkin I have no choice!

    I have no clue about the trivia question… is it…somewhere in South America??

  6. Those look delicious! Next time if you don’t fill all the muffin tins with yumminess before they go in the oven try putting water in the non-filled cups it helps keep the other items in the pan from drying out due to a lack of moisture content in the others. Works every time for me….or maybe you just ate three before taking a picture. Whose judging with those awesome nutrition stats! YUM!

  8. Wow, crazy how there’s no fat component in those muffins. I think I’d probably add the canola oil too, although they look like they turned out great regardless.

    The vanilla..I’m going to go with an out there guess. Colombia maybe?

    My husband is usually home all day (works from home) but he hasn’t been home in 3 weeks and I feel so bad that our cat is home by himself all day. 😦 (I thought of this when I read how Lily had to be in the crate all day)

    I used to have workouts like that with my horse! I would chase him around the field and we would play “tag”. Its fun! 🙂

    I dont even know where vanilla comes from. I know my Grandma bought some from Arizona, but that doesnt seem like the right answer at all. I feel like it should be somewhere tropical, and the only place I can think of is Mexico.
