Creamy Parmesan Spinach Dip

Happy Wednesday!

It’s snowing just about everywhere in the US it seems! When I walked out of work yesterday (in ballet flats!) a good 4″ of snow had fallen. Needless to say, the 20 steps to my car lead to near frost bite. Brrrrr!!! But despite this weather, the show must go on. I have lab rounds at a clinic that’s 50 miles north of home and then I will double back to go teach tonight. It’s probably fair to say I’ll be commuting most of the day. Fabulous.

Though, sitting in the car sounds okay right about now. I decided to shovel for my workout last night. I went out with intentions of just just do the sidewalks, but that only took about 10 minutes. So I decided to shovel the DRIVEWAY! Yep, you read that correctly. And the best part: we have a brand new snow blower! I’m walking like a hunch-back today, and sore is the understatement of the century, but it was a KILLER workout! I wonder what the neighbors are saying… 😉

On to a lightened up classic! This recipe contains light mayonnaise, which I must admit, I love. I know a lot of people don’t like mayonnaise, but I love the stuff (Hellmann’s mayonnaise, please! And no Miracle Whip! Ew!). It’s not like I use it often, but I love it in recipes where it belongs: chicken salad, tuna salad, dips, etc. I recall several years ago brainstorming summer job options with my sister-in-law — one of her requirements for a job was that it didn’t involve mayonnaise!! We had a good laugh over that one. I have a terrible memory, but I’ll never forget it! 😉

Creamy Parmesan Spinach Dip from Gina’s Weight Watcher Recipes

10 oz frozen chopped spinach, thawed and excess liquid squeezed out
1/2 cup light sour cream
1/4 cup + 1 Tbsp light mayonnaise
1/3 cup Parmigiano Reggiano
1/4 cup scallion, chopped
fresh pepper to taste

Directions:

Combine all the ingredients in a medium bowl. Can be made one day in advance and stored in the refrigerator. Remove from refrigerator 30 minutes before serving. Yield: 2 cups (8 servings, 1/4 cup each).

Nutrition Information (per 1/4 cup): 84 calories; 6.1 g. fat; 16 mg. cholesterol; 172 mg. sodium; 2.4 g. carbohydrate; 0.3 g. fiber; 4.4 g. protein

Result: DELICIOUS! I ate this cold with crackers and veggies, Mr. P heated it up and ate it on chips. It is versatile and scrumptious! It’s perfect to take in lunches to doll-up raw veggies, or as an appetizer at a dinner party. And the portion size is generous for the nutrition stats! Enjoy! 😀

Off for a crazy day! Why do I have a feeling dinner is going to be a Larabar and clementines? Going prepared!

  1. Wow! This seems much lighter then regular spinach dip. I might have to try this over the weekend for the Steelers-Ravens game! It looks just like the original dip, but healthier:-)

    I’m with you! Hellman’s only…none of that Miracle Whip stuff because it’s NOT mayo! Plus, it’s gross 🙂

  4. I like mayo in very very few things. Of course, dips would be one of them. But I never eat it just plain on sandwiches or anything like that.

    I forgot how intense shoveling snow is- haven’t had to do it for probably 5 or 6 years! Crazy…

  5. We had an anticlimactic dusting of snow. Nothing like the BLIZZARD OF DOOM the weatherman forecasted.

    That spinach dip looks great. I love spinach dip.

  6. I never liked mayo growing up but now I do enjoy using it to make tuna, chicken salads. It is excellent with a little hot sauce mixed in! I don’t do low-fat but I like the Hellman’s Olive oil brand!

  7. I don’t like mayo except in dips like this. Basically, I like it when I can’t taste it!

    I’ve been stuck in my house for three days due to snow. I’m going to attempt to go into the office today at noon, but I don’t know if it’s going to happen.

  8. I LOVE mayo! I use it as a dressing for my salads. It snowed last night and we were left with about 4 inches or so…..not so bad but not to great either!

  10. I live in a divided household….I eat Miracle Whip and my husband eats Hellmans.

    I was going to wear my heart rate monitor when we go to dig our our cars later – I bet it is a great workout!

    It snowed like crazy here last night. I cant believe I even got my car off my street. It wasnt easy let me tell you. Then for some crazy reason I offered to shovel my parents sidewalks this morning. Its quite the workout!

  16. Unfortunately…I LOVE mayo! the most fav way of eating it is dunking french fries in it! OMG! lol I learned of this tasty delicacy working at Burger King as teenager! lol Now I occasionally do reduced fat ( in recipes) and if I do have it, I portion out a tablespoon of full fat mayo! Cuz I love it! lol and I have to totally agree with you on the ickyness of miracle whip…lol

    I live about 2o or so miles south of Cleveland, Nicole…in Medina Co. It is snowing to beat the band here today….lake snow. Yuck. Safe travels to you…not a great day to be out on the road, for sure! And yes, I would love to meet up with you sometime for coffee or something. I live very close to 71. 🙂

  17. I do like mayo when it’s in a dip….but not usually by itself! And yes, it’s snowing here….there isn’t that much on the ground, but dangit people (um myself included) are driving slooooow!

  18. Shoveling snow sounds like a great workout – but definitely sore on the back. Not to rub in your snowy weather, but it’s gonna be in the 60’s for the next week in Vegas. I’m excited for some nice runs!

    I love mayo too! Like, L.O.V.E. it! What’s better than french fries dipped in mayo?!! However I don’t really eat it much anymore…. Mmmm mayo. and spinach dip. and all things made with mayo!

    LOVE mayonnaise!! It snowed yesterday, but it’s all slushy and messy tonight, and is supposed to rain for the rest of the week, so whatever is left will soon be washed away. This dip looks fantastic, Gina’s site is great!!! (so is yours!) Have a great day.
