Fish tacos & a kitchen question

Fish tacos are one of those items on a menu that either turn out really good…or reeeeaaally bad. I got brave this week and decided to make homemade fish tacos Prevention-style.

The salsa I borrowed:

Corn and Jicama Salsa from Cooking Light

1/2  cup  fresh corn kernels (I used canned)
1/2  cup  finely diced peeled jicama
1/2  cup  canned black beans, rinsed and drained
2  tablespoons  chopped fresh cilantro
1  tablespoon  fresh lime juice
1/4  teaspoon  ground cumin
1/4  teaspoon  salt


Chop ingredients, toss together, and refrigerate to chill. Serves 4.

Nutrition Information (per serving): 52 calories; 0.5 g. fat; 260 mg. sodium; 16.5 g. carbohydrate; 2 g. fiber; 3 g. protein

Result: Delicious! The jicama adds such a nice crunch to the beans and corn, I enjoyed this salsa more than I expected, actually! Mmm!

I put 2-3 ounces of cod seasoned with lemon pepper which was pan sauteed in 1-2 teaspoons of extra-virgin olive oil along with Corn and Jicama Salsa, avocado slices, and fresh cabbage in a each of 2 corn tortilla. Mmmm!

Result: Best fish tacos…ever? Ooooh yeaa. They were delicious! I can’t wait to make these again! 😀

I was going to grill up the HUGE squash I picked from my garden yesterday, but I saved it for tonight!

I selfishly ask this question about cabinet color 🙂 We’ve seen homes with both and Mr. Prevention is not a fan of the white. Personally, I like both…so long as the kitchen is large and comes with plentiful cabinets and counter space!

And food-related…

Question: Have you had jicama before? Did you like it?

  2. Actually, my favorite cabinets that I ever saw in a kitchen were buttercream – like a warm white color. Loved them!

  3. Gotta go with the dark. Maybe you need an avocado color though 🙂 or something else a little more wild.

  4. That salsa sounds delicious! I love jicama…its so funny how it really does taste like a cross between an apple and a potato! Plus it’s SO good for you.

    I really like the cherry kitchen. It seems more rustic and less apt to get dirty.

  5. I LOVE fish tacos, but haven’t yet found a successful homemade recipe; yours look great! Jicama adds such a wonderful freshness and crunch to a dish – I really should use it more often.

    Both of those kitchens are gorgeous, but I lean more towards cherry cabinetry. The all-white kitchen would be perfect for a summer cottage on the water… ah a girl can dream ;).

  7. I have had jicama at a restaurant, but never seen or looked for it at the grocery store. I love fish tacos, especially when I make them at home!
    I like either color cabinet, but it totally depends on your floor and countertop color scheme. White looks great with a lighter wood floor and darker counters – really pops. With darker cabinets, it’s nice to have more windows to bring some light into the kitchen. Just my two cents 🙂

  8. Yep, you LOVE your fish tacos!! I don’t get them often because of the shell, it usually contains wheat, boooo. Your recipe sounds fantastic and I’m sure I could make it with some wheat free shells, if I ever find them.

    I like the cherry cabinets, but white is beautiful too. We have white in our tiny kitchen and I love them, but they do show up dirt easily, which is unfortunate.

  10. I like white cabinets, but one thing I’ve learned from home buying/selling is that most people do not like white!! go with cherry, it’s better for re-sale.

    Ohhh Jicama! My childhood favourite snack! I remember how I used to buy a bunch of these and run home quickly to eat in front of TV. It’s so strange that we used to consider it as a fruit… it is vegetable right? I have never tried these on salad before. The only way I know how to cook them is to dice them, then color them in organic food color, and roll in topioca flour, drop in hot boiling water then they will come out just like pomagranets seed…then serve with syrup and coconut milk.
    It is intersting to know that it will be great with tacos. I will definitely try this!
    I love cherry! It looks more homely and luxury.

  14. I love both of those kitchens! Thought I would probably go for the darker one, just because it wouldn’t get do noticeably dirty…I’m a messy cook!

    I have white and prefer cherry because no matter how much I clean the white ALWAYS shows some kind of dirt of food stain. Plus I think the darker color is less stark,my white kitchen looks too institutional.

  16. Tough choice… I like the white but I agree with Lori. White always shows stains. Having come from a house with white and now in a house with white I think the dark looks nice. It seems warmer. Just imagine it with the smell of bread baking in the oven….

    Jicama salsa – awesome. There’s a place by my house that has mango-jicama salsa – I’m still trying to figure out how to replicate it, but for now I just drool a little bit each time I get some.

  18. Those tacos look de-lish!!! Yum! I don’t mind either as long as the flooring looks good with the cabinets. I prefer a darker wood floor with white and a complimentary floor color (no matcht matcht) with the cherry. Weird I know! 🙂

  19. My cabinets are custard colour and I love the look, but they do get dirty rather easily (especially with the dog jumping up on them and begging for food!)

  20. I’m usually a fan of dark wood, but I actually think the white looks nicer! I’ve never tried jicama before, but I see it around the blogs a whole lot!

    White, no way! I have white cabinets in my home now, they get soooooo dirty. I keep a pretty clean house, but it seems I battle with the cabinets to keep them clean. I’m not a pig, really. Lol. I cook and bake only homemade things, three meals a day, so I’m in there lots. I would never have a white kitchen again. It looks pretty in the magazines, but I think I’m going to paint it red!

  26. I like both kitchens, but cherry is what I have 🙂 The color scheme of that kitchen is just like mine, actually! I do like jicama – the first time I ever had it was when I worked at California Pizza Kitchen long ago. They use it on their barbecue chicken salad. Delish! last summer I used it in a pineapple-jicama slaw for chicken lettuce wraps.

  27. I love, love, love dark cabinets! I think it makes the kitchen feel cozy and warm. However, our new house has white cabinets, which I used to hate. I’m getting used to them though…

    But I agree, storage space and counter space trump cabinet color any day 🙂

  30. I love jicama and only discovered it about a month ago!! That salsa looks tasty!
    As for kitchens, I personally prefer cherry but white does it for me depending on the layout. My mother in law has AWESOME white cabinets in her kitchen! So I guess that means I like both. I just want a LARGE kitchen!

    Oh….to dream about a beautiful kitchen like that one day. I’ll play this game. 🙂 I LOVE both of them. But I almost prefer the white, only because I’m a huge fan of bright, light rooms (like, lots of windows in a house) and I’m afraid the cherry would make it too dark. But I would definitely take either!

    I like both of those kitchens, but I lean towards lighter colors after having experienced darker ones. I like the white or a lighter brown.


  38. It really depends on the style of your home. I do love both, but I can see the white cabinets in more of a country style home, and the darker cabinets in a modern home. I have always dreamed of having a white kitchen but with a little toddler running around I can’t even imagine how many hand prints would be every where! lol

  40. While I like white cabinets because they are bright, they are a pain in the ass to keep clean. So I would go with a darker cabinet.

  43. I love the way white looks, but white cabinets can get dirty very easily and then they are dingy white which isn’t pretty. I know that I could not keep up with keeping the white clean! The cherry is beautiful also! The fish tacos look excellent-I’ve never tried to make my own before.

    I like white cabinets, but I really like the cherry too. I think it depends on the rest of the kitchen. My parents had to redo their kitchen (the pipes exploded) and they did everything but the cabinets, Ive been trying to convince my mom to stain them cherry because right now they look awful. The cabinets in my kitchen are white, and even though theyre cheap, I really like them. It feels fresh – but theyre a pain to keep clean.
