Chili Contest: Entry 5

It’s hard to believe Saturday was the Illini’s 5th game of the season…and what a victorious win it was at Penn State! It’s rare the Illini OWN another team…so I was pleased! The girls, Mr. P, and I enjoyed the game from our home theatre and chowed down on this week’s chili entry…which was delicious!! Consensus among all…even my very picky friend, Mary 🙂

Turkey and Black Bean Chili from The Art of Living

1 Tbsp olive oil
1 large onion, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
4 garlic cloves, minced
1 lb ground skinless turkey
2 (15 oz) can black beans, rinsed and drained*
1 (14 ½ oz) can low-sodium diced tomatoes
1 can tomato sauce
2-3 Tbsp regular chili powder
Ancho chili powder, to taste (about 1 tsp)
Chipotle chili powder, to taste (about 1 tsp)
1-1 ½ Tbsp ground cumin
1 tsp dried oregano
1-2 tsp salt
2% shredded sharp cheddar cheese (2 Tbsp per serving)
fat free low-fat sour cream (1 Tbsp per serving)
sliced scallions, if desired

Directions:

Heat the oil in a large nonstick saucepan over medium-high heat.  Add the onion, bell pepper, and garlic; cook, stirring occasionally, until softened, about 5 minutes.  Add the turkey and cook, breaking it apart with a wooden spoon, until no longer pink, about 3 minutes.  Stir in the beans, tomatoes, tomato sauce, chili powder, cumin, oregano, and salt; bring to a boil.  Reduce the heat and simmer, covered, until the vegetables are very tender, about 45 minutes.  Taste and adjust seasonings.  Serve with the cheese, sour cream, and scallions. Serves 6 w/ cheese, sour cream, and scallions.

Nutrition Information (per serving): 406 calories; 13.8 g. fat; 79 mg. cholesterol; 1523 mg. sodium*; 43 g. carbohydrate; 10 g. sugar; 14.5 g. fiber; 32.8 g. protein

Result: DELICIOUS!! We loved this chili! Authentic, flavorful, and high in fiber. The sodium* content is much lower than it calculated to because the black beans are drained and rinsed.

In addition to amazing chili, we enjoyed Harry Potter Pumpkin Cookies, Pumpkin Spiced Lattes, Crock Pot Applesauce, Individual Pumpkin Spice Breakfast Cakes, and sushi! YUM!

Omg, I ate out every single meal the last two days- it’d be hard to narrow it all down, but I was particularly fond of a cinnamon roll that came with coffee as I was watching the marathon yesterday. Not sure if it was because I was absolultey STARVING or because it was that good. Either way… it’s my pick! 🙂

  2. The chili looks great. Great idea adding Turkey instead of beef. Sounds like you had a great weekend. My favorite food this weekend was the steak I ordered I Myrtle beach. I have never ordered a steak before and this one was loaded with blue cheese and a mushroom wine sauce. Delicious.

    We also picked 12 pounds of yummy apples of 4-5 variations!

  4. I made a plate of nachos yesterday and for some reason they totally hit the spot–so I’m going with that. The chili looks great!

  6. Sounds so flavorful and filling! I’ve been enjoying a lot of baked goodies this weekend all my from kitchen. Super cinnamon snickerdoodle cookies and mini pumpkin tarts. Both I’ll be sharing this week!

  7. I had a wonderful Indian dinner this evening – some of the best leg of lamb ever!! It was pure awesomeness. 😉 Indian food is soon becoming a new favorite of mine. Too bad I’m being spoilt on the authentic stuff and may not be able to cope with an Americanized version when I get home. 😦

  8. It is still a little warm here in Vegas but I am looking forward to making some chili! I am all about chili leftovers as well!
    The tastiest thing I had this weekend was a burger and fried pickles at this event I went to!

  9. That chili looks great too! I still have white chicken chili on my list of things to make. Hooray for Illinois! So much more fun when your team wins! 😀

    I had a really good tomato basil soup at Water Tower with corned bread that was to die for!

  10. Hmm.. the tastiest thing, that’s a tricky one! I have to pick three… my homemade applesauce, the apple cake I made and the spaghetti and meatballs I cooked up last night! Total fall comfort food, even though it’s screaming hot here for this time of the year.

  11. I have loved your chili series and I have to say, I think this recipe is my favorite so far! This is my kind of chili! Add a dollop of Greek yogurt and I’d be in heaven. 🙂

  12. I am eating chili as I type this. It’s probably not as good as yours though.

    As for the best food of the weekend, I had a really good black eyed pea hummus.

  13. I love the looks of this recipe because when I make chili, I tend to use ground turkey vs beef. You have got a really good line up of chili recipes–love it!
