I feel like a poser dietitian when I say I’m not quinoa’s biggest fan. There, I said it. I’ve said it before…quinoa doesn’t didn’t impress me. HOWEVER, I think this is because of how I’ve prepared quinoa…not a distaste for the grain itself. Since savory quinoa didn’t tickle my fancy, I chose to try a different route…in the form of baked goods 🙂
Dare I say that after this recipe, I’m looking forward to making quinoa a star in upcoming recipes!
I’m a quinoa convert!
Lemon-Quinoa-Poppy Seed Bread from Recipes by Mo
1/2 cup quinoa
juice of one lemon + water to make 1 cup
1 cup white whole wheat pastry flour
1/4 cup unbleached all-purpose flour
1 tsp baking powder
3/4 tsp baking soda
3/4 tsp sea salt
1 Tbsp poppy seeds
1/2 tsp ground cardamom
1/3 cup white granulated sugar
5 tsp honey
1/4 cup flax egg (1 Tbsp ground flax seed + 3 Tbsp water)
Zest of 2 lemons
Juice of one lemon
1/2 cup skim milk
1/2 tsp almond extract
2 Tbsp canola oil
Preheat the oven to 325º F.
Rinse the quinoa well. Then, zest a lemon and juice it into a measuring cup, and then add as much water as needed to make 1 cup of liquid. Boil the quinoa and the lemon water for a couple of minutes, then cover and turn off the heat. Leave it there while you prep the rest of the recipe.
In a large bowl combine all of part two. In another bowl, combine all of part three. When the quinoa’s ready, add it to part three, then add all of that to part two. Pour into a well-greased loaf pan. Bake for 35 minutes. Let cool in the pan for about 30 minutes, then let cool on a rack. Serves 8.

Result: Delicious! Who doesn’t love lemon poppyseed bread? Bonus points for adding in multiple whole grains! Mr. Prevention was diggin’ the bread, too. I’ve caught his fingers in the loaf a few times 😉
